Now that the local limes are diminishing, my grafted Tahitian lime tree is bearing its first crop of big, beautiful limes. The health benefits of lime include weight loss, skin care, good digestion, relief from constipation, eye care, and treatment of scurvy, piles, peptic ulcer, respiratory disorders, gout, gums, urinary disorders, etc. These limes are perfect in juices, cocktails, sauces or dressings. Drink a glass of water with the juice of one lime squeezed into it just a few times each day and watch as your waist grows smaller!

For the record, its most commonly known as the Kaffir Lime, however the word 'kaffir' is a racist term to insult black Africans. and besides, the tree i s natie to the subcontinent and southeast Asia, where it is known in Thailand as makrut or commonly used in the country's wonderful cuisine. The fruit is not actually classified as a true lime as far as limes go but it does however belong to a sub-species of the citrus family known as citrus hystrix or citrus amblycarpa. One health benefit generated from the limes themselves is to grate some of the rind of the fruit and add it to any fish or chicken dish. Great in stir fries and curries.

Green Papaya can be used exactly the same way you would a summer squash. Peel it, rinse off the milky *papain then slice in 1 inch rounds (or cube)and steam or saute in coconut oil. You can also shred it and add it raw to salad or stir fry! I use the seeds, after squeezing them out from their gelatinous casings just like black pepper! Papaya has antibiotic qualities and is good for the digestion. *Supposedly, Consuming 1 T Papain, combined with 1 T Honey and 3-4 T Hot Water will get rid of intestinal worms!

The pods are extremely nutritious, containing all the essential amino acids along with many vitamins and other nutrients. The mature pods are usually fried and possess a peanut-like flavor. Moringa pods can be cooked in a variety of ways. Until they become too woody to snap, they can be cooked much like green beans. To cook, boil whole pods, after soft, peel outer layer and scrap out insides to add to your dish. Cook pods as in Pea Soup receipe. Add fleshy part of pods to lentil soup. This "slip" is a 7 foot tall cutting of a moringa trunk, cut so that it's tall enough to bury 3 feet deep and keep the growth tip out of reach of grazing animals. One of the most nutritional and hardy trees in the world. Renowned for its super-food qualities, this tree is drought resistant and highly medicinal. With white flowers that appear at any month of the year, it is amazingly beautiful (great for bees) and can be pollarded to provide extremely versatile landscaping uses. High in protein, essential amino acids, vitamin A, vitamin C, potassium, calcium (when dried; contains oxalic acid when fresh that inhibits calcium uptake but it breaks down once dried or cooked). It's off the charts! Seeds from pods are used to purify water in India, where this plant is native. It also does not get out of control, but can be easily propagated with stem cuttings..... a truly amazing tree and one of our absolute favorites at Creque Dam Farm!

Popular in Mexico and Central America, eating the paddles of the prickly pear cactus is a nutritious addition (high in fiber and vitamin C) to any meal. Remove any needles and nodules .. then slice and possibly dice. The texture becomes somewhat sticky like okra with a fresh, tart, unique bean-like taste. They are GREAT as a side to eggs as well as in casseroles or on the grill.
