A popular perennial green consumed in Mexico and Central America, chaya's leaves and thick, tender stem tips are cut and boiled as spinach. It is very high in protein, Calcium, Iron and Vitamin A. Grows as a bush - even in the dry times. Harvest the younger leaves to eat. Raw chaya leaves are toxic as they contain a glucoside that can release toxic cyanide. Cooking for 10 minutes or more will render the leaves safe to eat. Discard the water and toss with oil or butter. Try it with eggs too.
To plant, just place the stick in the soil and water. locate in full sun or partial shade.

This "slip" is a 7 foot tall cutting of a moringa trunk, cut so that it's tall enough to bury 3 feet deep and keep the growth tip out of reach of grazing animals. One of the most nutritional and hardy trees in the world. Renowned for its super-food qualities, this tree is drought resistant and highly medicinal. With white flowers that appear at any month of the year, it is amazingly beautiful (great for bees) and can be pollarded to provide extremely versatile landscaping uses. High in protein, essential amino acids, vitamin A, vitamin C, potassium, calcium (when dried; contains oxalic acid when fresh that inhibits calcium uptake but it breaks down once dried or cooked). It's off the charts! Seeds from pods are used to purify water in India, where this plant is native. It also does not get out of control, but can be easily propagated with stem cuttings..... a truly amazing tree and one of our absolute favorites at Creque Dam Farm!
